Orangeyou going to eat some pumpkin?
As ridiculous as it may seem, I just had to show you how ORANGE this pumpkin was/is. I was amazed at the colour, such a rich orange. Not that bland washed out orange of supermarket pumpkins...this was the real deal.
We are so spoilt having such amazing fresh veg' on this island. I spent most of the afternoon getting meals ready for the freezer with the current glut of in season vegies -pumpkin and leek -before they spoil. I cut up and roasted the pumpkin, and made pumpkin soup. There is now a serve of soup in the freezer, and three freezer bags of roasted pumpkin. I also made enough potato and leek soup for a big serve in the freezer, and some for lunch tomorrow.
I know it might seem a bit boring to some, but I am just revelling in the time, energy and motivation I have at the moment to do this sort of thing. It is become quite a habit, to spend an hour or two every other day preparing something or other.
Next up is preparing some green and orange paw paw pickle....i'll keep you posted on the success.
